Sweet Corn Cake
Ingredients
- 3 large eggs
- ½ cup canola oil (100g)
- ½ cup unsweetened applesauce (130g)
- 2 cups vanilla yogurt (450g)
- ½ cup maple sugar (100g)
- 1½ tsp baking powder
- ½ tsp baking soda
- ½ tsp fine sea salt
- 2 cups yellow cornmeal (280g)
- 1 cup all-purpose flour (120g)
- 1 14 oz can sweet corn drained
Instructions
- Heat oven to 375°F.
- Spray a 12 inch cast iron skillet with cooking spray.
- Thoroughly combine eggs, oil, applesauce, yogurt, sugar, baking powder, baking soda, and salt in a blender on low speed or with an electric mixer. Gently stir together with cornmeal and flour until no dry pockets remain. Stir in drained corn.
- Pour into prepared skillet and transfer to oven until golden brown on top and firm in the middle, about 30 – 35 minutes.
- Let cool in pan for about 10 minutes. Slice into 12 wedges.
