Instant Pot “Baked” Beans

I purchased a shopping bag full of navy beans, convinced that with enough trial and error I could figure out how to make perfect “baked” beans in the Instant Pot. I think my experimentation was worth it. Once you try these you will never want to go back to canned.

Instant Pot "Baked" Beans

This recipe for "baked" beans uses three settings of the Instant Pot for a delicious one-pot dish

Ingredients
  

  • 1 lb dry navy beans
  • 2 tsp extra virgin olive oil
  • ½ large onion diced finely
  • 6 cups water
  • ¼ cup brown sugar packed
  • cup molasses
  • 1 Tbsp dry mustard
  • ¼ tsp white pepper
  • 1 Tbsp apple cider vinegar
  • 1 tsp liquid smoke
  • 1 ½ tsp fine sea salt

Instructions
 

  • Sort and rinse beans. Soak overnight in ample water and rinse again.
  • Heat olive oil in Instant Pot on high Sauté setting. Cook onions until translucent, about four minutes.
  • Press Cancel on the Instant Pot and add 1 cup of the water to arrest cooking. Add beans, remaining water, and the rest of the ingredients except salt. Stir well, secure lid, and set to Pressure Cook for 30 minutes. Allow pressure to release naturally for 20 minutes after cooking has finished, then release remaining pressure manually.
  • Remove lid and add salt. Turn Instant Pot to medium Sauté setting and cook uncovered for one hour to thicken, stirring frequently. (Your Instant Pot may turn off midway through. Just turn it back on again.)
  • Press Cancel and serve.
