Brussels Sprout Stalk Spread
Ever wondered if a Brussels sprout stalk is edible? It is, and delicious.

Ingredients
- 1 24" Brussels sprout stalk
- ¼ cup mayonnaise
- 1 tsp Dijon mustard
- 1 tsp tarragon vinegar
- 1 tsp fine sea salt
- ¼ tsp white pepper
- toasts for serving
- parsley for serving
Instructions
- Carefully cut stalk into 6 inch segments.
- Add 1 ½ cups of water to Instant Pot. Insert steamer basket and add the stalk segments. Cook at high pressure for 1 hour.
- Release pressure immediately. Remove segments, split lengthwise, and scoop insides into a food processor (a mini prep works great for this.)
- Add remaining ingredients and puree until smooth.
