Sweet Corn Cake

Ingredients
  

  • 3 large eggs
  • ½ cup canola oil (100g)
  • ½ cup unsweetened applesauce (130g)
  • 2 cups vanilla yogurt (450g)
  • ½ cup maple sugar (100g)
  • tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 2 cups yellow cornmeal (280g)
  • 1 cup all-purpose flour (120g)
  • 1 14 oz can sweet corn drained

Instructions
 

  • Heat oven to 375°F.
  • Spray a 12 inch cast iron skillet with cooking spray.
  • Thoroughly combine eggs, oil, applesauce, yogurt, sugar, baking powder, baking soda, and salt in a blender on low speed or with an electric mixer. Gently stir together with cornmeal and flour until no dry pockets remain. Stir in drained corn.
  • Pour into prepared skillet and transfer to oven until golden brown on top and firm in the middle, about 30 – 35 minutes.
  • Let cool in pan for about 10 minutes. Slice into 12 wedges.
